Wine making on Santorini goes back thousands of years to the 3rd
millenium B.C. The 3,500 year old tradition in vineyard cultivation and the art of greek
vinification is nowadays still maintained by the 850 growers of the
Viticultural Cooperation on Santorini island.
They toil the island' s 6,276 acres of vineyards intensively, which
represents 1/3 of Santorini.
The lavastreams of the volcano have burned the rocks and covered
the island, making the land absorbing, porous and rich in lime. Santorini wine is known in three varieties: Asyrtiko, Athiri and Aidani. Generations of Santorinians have been producing these unique wines, which are very distinctive in taste and bouquet due to the volcanic soil of the island.
The grapes are grown on terraces; the branches of the vines are spread flat on the ground.
In this way the plants get enough water by the trapped humidity in the porous soil and by the morning dew, produced by the evaporation of the Caldera-sea.
The particular microclimate created by these two phenomena, relieves the thirsty vines during the long, hot months.
On this dry land flourish the most aromatic varieties of grapes in the Mediterranean.
Santorini produces excellent dry white wines in a wide choice of over sixty local brands), dry red wines and sweet dessert wines.
There are some nice winery's on the island. An old winery in Kamari, that of "Volcan" agency, established in 1880, has been converted to a museum of wine production. It is presented the process of wine making, as well as the equipment and machinery used, traditional artefacts etc. Nearby Kamari, at the SantoWinery, you can sample
some wines for a very reasonable price, while sitting on a quiet terrace
with an extended view on the Caldera, amazed by the most incredible sunsetcolors you have ever seen.
