The Santorini Cuisine offers you tomato croquettes, made from tiny, delicious tomatoes; split pea puree known as ‘fava’ with all its different versions; white aubergine with its firm body; wild rabbit, fresh fish with capers, salads with caper leaves, fresh goat cheese and sweet ‘melitinia’.
Together with the drink "tsikoudia"and the wonderful wines the Santorini cuisine satisfies eventhe most demanding taste.
Since the 50's, pistachio-trees are cultivated on the island. The pistachio fruit is smaller than the usual and its taste has a sweet tone, owned to the anhydrous environment and to the fact that the desiccation takes place with the exposure to the sun.
